Cut chicken breast into small cubes and season with salt and pepper. Heat 1 tbsp oil in a skillet over medium-high heat and cook chicken until golden and cooked through, about 8-10 minutes. Set aside.
Dice bell peppers and onions. In the same skillet, heat 1 tbsp oil and sauté onions and peppers until softened, about 5 minutes. Season with salt and pepper. Remove from heat.
Grate the cheese. Place a tortilla on a clean surface and sprinkle half with cheese, cooked chicken, sautéed peppers and onions, and more cheese. Fold tortilla in half.
Heat 1 tbsp butter in a large skillet over medium heat. Place quesadilla in skillet and cook for 3-4 minutes until golden and crispy. Flip carefully and cook the other side for 2-3 minutes until cheese melts.
Transfer cooked quesadilla to a cutting board. Repeat with remaining tortillas and fillings. Cut quesadillas into triangles and serve hot with diced tomatoes on the side.
