Heat a large skillet or griddle over medium-high heat and add 1 tablespoon of butter.
Scramble the eggs in a bowl with a pinch of salt and pepper, then cook them in the skillet until just set. Remove and set aside.
Reduce heat to medium. Place one slice of bread in the skillet and top with half the cheddar cheese.
Add turkey slices, sautéed peppers, cooked eggs, and diced tomatoes on top of the cheese.
Sprinkle remaining cheddar cheese over the filling, then top with the second slice of bread.
Carefully flip the quesadilla and cook for 2-3 minutes until the bread is golden brown and cheese is melted.
Transfer to a plate and serve immediately with sour cream on the side for dipping.
