Combine lamb with grated onion, garlic, cumin, coriander, cinnamon, parsley, salt, and pepper.
Mix well by hand until uniform. Chill 15 min.
Divide into 8 portions. Shape each around a skewer into a 5-inch log.
Grill over medium-high heat 4-5 min per side until cooked through and charred.
Serve with Greek yogurt dipping sauce and warm flatbread.
